Our story does not begin in a chocolate factory. It begins in 1987, on a mist-covered slope in Ecuador’s Napo Valley, where my grandfather planted his first fifty cacao trees. He was not interested in volume. He was interested in truth. Today, Terroir Cocoa spans over two hundred acres, but our philosophy remains unchanged. We do not grow chocolate to fill shelves. We grow it to preserve terroir, to honor biodiversity, and to craft something that lingers on the palate long after it melts.

Rooted in Volcanic Soil

The geography of our estate dictates everything. Nestled between ancient lava flows and cloud forest runoff, our soil is rich in iron, magnesium, and trace minerals that do not simply nourish the tree—they imprint the bean. Cacao does not mimic its environment; it metabolizes it. That is why our Napo Valley harvest carries notes of dark plum and toasted walnut, while our high-altitude clones develop bright, citrus-forward acidity.

We cultivate over twenty genetic varieties of fine-flavor cacao, selecting clones not for yield, but for complexity. Each row is mapped, tracked, and harvested at peak ripeness. A single pod that is days too early or too late will not make it into our fermentation boxes. This is not perfectionism. It is precision.

Canopy Management & Shade Grown

The Canopy System

Cacao is not a crop for full sun. It thrives under the shade of native legumes, banana plants, and towering ceiba trees. Our polyculture system mimics the natural rainforest ecosystem, reducing pest pressure naturally, retaining moisture, and sequestering carbon at a rate three times higher than monoculture plantations. The shade does not weaken the tree. It concentrates its energy into the beans.

The Fermentation Secret

Most consumers never think about fermentation. It should. This seven-day process is where chocolate earns its flavor precursors. Raw cacao pulp is naturally acidic, bitter, and entirely unrecognizable as chocolate. Only through controlled microbial fermentation do the complex sugars break down, proteins denature, and the hundreds of aromatic compounds awaken.

We ferment in hand-built cedar boxes, turning the beans every thirty-six hours to regulate temperature and oxygen exposure. Too hot, and you lose nuance. Too cool, and the reaction stalls. We monitor this daily, reading the beans like a diary.

After fermentation, the beans are sun-dried on elevated wooden racks for ten to fourteen days. No mechanical dryers. No shortcuts. The slow removal of moisture allows the flavor compounds to stabilize, preserving the delicate balance we worked so hard to create.
